Ingredients

Egg white
1 number
Caster sugar
1/3 cup
Ground almonds
85 grams
Almond extract
1/4 teaspoon
Salt
1 pinch
Icing sugar, to dust

Steps

  1. Preheat the oven to 200 °C.
  2. Line cookie sheets with parchment.
  3. Beat the egg white till doubled, with soft peaks.
  4. Add caster sugar and whisk till just combined.
  5. Fold in the ground almonds, almond extract and salt.
  6. Make small balls of the mixture and place on the cookie sheet, evenly spaced apart.
  7. Dust with icing sugar.
  8. Bake for 10 minutes, till golden brown.
  9. Remove the cookies from the sheet using a spatula while still slightly warm and soft.
  10. Cool completely on a rack.
  11. Store in airtight containers.
